Pollo light al condimento di senape del Bottaccio

Ingredients:(for 3 people) 700g of chicken breast (recommended serving size) 4 tablespoons MUSTARD Seasoning with extra virgin olive oil 3 tablespoons extra virgin olive oil 1 butter nut
salt and pepper
bread crumbs thyme
rosemary
lemon
Preparation:
- To start, prepare the marinade in a baking sheet by mixing lemon juice, thyme, rosemary, black pepper, salt, extra virgin olive oil and mustard seasoning. Place the chicken breast slices in the marinade, turning them from side to side to ensure they are well soaked. Let them rest for 35-40 minutes, preferably in the refrigerator, to allow the chicken to absorb all the flavors.
- In a pan, melt the butter and add the chicken slices. Brown the chicken on both sides until golden and crisp.
- Once the chicken is cooked, let it cool slightly and spread a little more of the mustard dressing on each slice. Then knead them in the bread crumbs, making the dough stick well.
- Put the breaded chicken back in the pan and cook for a few minutes, until the panatura is crisp. Remove from the heat and serve immediately, perhaps with a portion of white rice or a fresh salad.
