Zucchini and dried tomatoes sandwich with cannellini bean cream
Today we offer you a delicious sandwich with zucchini and rich in fresh flavors. The cannellini bean cream is combined with grilled zucchini and Extra Virgin Dried Tomatoes for a perfect dish to serve as an appetizer or during the aperitif, accompanied by a good drink.

Ingredients (for 4 servings):
- 4 sandwiches
- 250 g of cannellini beans (already boiled)
- half a lemon
- 1 tablespoon of tahin (sesame cream)
- 16 Extra Virgin Dried Tomatoes
- 4 zucchini
- Extra virgin olive oil
- A pinch of chili powder
- A pinch of salt
- A bunch of basil
Procedure:
Prepare the bean cream: Rinse the cannellini beans and blend them with lemon juice, chili powder, tahini and basil. Mix until smooth and homogeneous.
Grilling the zucchini: Cut the zucchini lengthwise into slices about 2 mm thick. Cook on a hot plate for about 30 seconds per side, until you get some grilled strips. Season with a pinch of salt and two tablespoons of Olio Extra Vergine Classico.
Prepare the dried tomatoes: Drain the Extra Virgin Dried Tomatoes and gently dry them with kitchen paper.
Assemble the sandwich: Cut the rolls in half and spread the cannellini bean cream on both halves. Add the Dried Tomatoes and the grilled zucchini.
Serving: Close the sandwiches and serve them immediately, ideal as an appetizer or for an aperitif.
Tip:
If you want to make your zucchini sandwich even richer and tastier, you can add some fresh rucola leaves or a little spreadable goat cheese. This will make the sandwich more creamy and aromatic, perfect for a quick meal or picnic!
